With the holidays just around the corner, I wanted to share a quick and easy “Chocolate Strawberry Pancakes” breakfast recipe that is sure to impress both your house guests and your little kiddos in the morning!
Making homemade pancakes is super easy to do and requires very few ingredients, most of which you most probably already have in your kitchen – flour, sugar, milk, eggs, butter, salt, baking powder and PAM Cooking Spray. After you have gathered together the basic ingredients for your pancakes, by adding just a few extra special ingredients, like strawberries and chocolate to the pancake batter, you get this delicious, mouth-watering meal.
Here is my super easy to follow, “step-by-step” recipe….
- 1 cup flour
- 1 teaspoon baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- ¾ cup milk
- 2 tablespoons melted butter or margarine
- 1 egg
- PAM Cooking Spray
- 5 large strawberries (chopped into small pieces)
- ½ cup chocolate chips
- Maple syrup (optional)
- In a large bowl, beat the egg until fluffy
- Add the milk and butter.
- Add in all the dry ingredients to the bowl, flour, baking powder, sugar & salt.
- Mix until well blended.
- Spray the frying pan or griddle with a light coating of PAM Cooking Spray.
- Heat the pan.
- Once the pan is hot, lower the heat and pour a portion of f the pancake batter onto the frying pan.
- Place some strawberries and chocolate chips on the batter.
- Flip the pancake when you see small bubbles forming. Approx 1 min.
- Remove the pancake when both sides are a golden brown.
- Serve with maple syrup and fresh strawberries.
Step 1:
Beat the egg and then mix all the wet ingredients (egg, milk & butter) in a bowl.
Step 2:
Add the dry ingredients (flour, sugar, baking powder & salt) and mix well.
Step 3:
Chop up your strawberries into thin, small slices. The thinner the better.
Step 4:
Heat the pan and make sure you evenly spray the frying pan or griddle using your PAM Cooking Spray. If you spray too much, don’t fret, just take a paper-towel and rub away the excess. Super Note: PAM Cooking Spray leaves *99% less residue than margarine or other bargain-brand cooking sprays, which makes cleaning up super easy.
(*vs. leading cooking sprays (except olive oil), after spraying on glass bakeware, baking at 400° for 30 min, cooling, and then washing in standard home dishwasher with detergent and repeating 4 times).
Step 5:
Turn the heat to low and pour a small portion of the pancake batter onto the pan. Note: I prefer to use my glass measuring cup to pour the batter, however a big round spoon will work just as well.
Step 6:
Sprinkle the cut strawberries and chocolate chips on the wet batter. For a more consistent flavor, try to your best to evenly distribute it on top of the batter.
Step 7:
Flip the pancake over when you see small bubbles forming at the top. The pancake should be a light golden brown color on both sides.
Step 8:
Serve with fresh strawberries, chocolate chips and maple syrup.
Step 9:
